jar 680g PREGO® Traditional Pasta Sauce
g PREGO® Spiral OR Prego High-Fibre Tri-colour Spiral
Eggplant, diced
Large Onion, chopped
Large Red Capsicum, diced
Zucchini, diced
springs of Oregano & Thyme leaves
tablespoons Olive Oil
L cups vegetable stock
Parmesan Cheese, grated
Salt and pepper
Heat olive oil in saucepan. Sauté onion in oil until golden. Then, stir-fry the diced vegetables and garlic until cook.
Pour in PREGO® Traditional pasta sauce, vegetable stock and simmer for 15 minutes. Add Oregano & Thyme leaves into the soup with Spiral. Cook for 15 minutes. (A little water, salt and pepper can be added to taste).
Grate cheese on top. Enjoy!
